In April, I flew to Iceland with Molino Polselli – La Farina Italiana. Not as a tourist. As a jury member for Ciociaria&Cucina, invited to judge “Il Contest” – a competition built around pizza, dough, and the craft of baking.
But a journey that wants to become a story can’t stop at the competition.
Before judging the pizzas, I needed to understand the city. The light. The sea. The lava rock. The bakeries where young Icelanders work with quiet discipline. The late-night hot dog eaten without ceremony. The geothermal bread baked by the earth itself.
